Tiramisu - cooking recipe

Ingredients
    3 None large eggs, separated
    1/2 cup sugar
    2 cups mascarpone cheese
    2 tbsp sweet marsala wine
    1/3 cup plus 2 tbsp dark chocolate, 1/3 cup coarsely shaved with a knife, 2 tbsp grated
    18 None lady finger cookies
    1 1/2 cups freshly brewed coffee, cooled to room temperature
Preparation
    For the mascarpone mixture, combine egg yolks and sugar in a bowl and whisk until pale. Gently fold in mascarpone. Beat egg whites in a separate bowl until stiff peaks form. Add marsala and half of the grated chocolate. Whisk again untilsoft peaks form. Fold gently into mascarpone mixture.
    To assemble, place a single layer of cookies in the base of a deep serving dish. Pour in enough coffee to soak them well. Spread mascarpone mixture on top, then add another layer of cookies, followed by more coffee and more of the mascarpone mixture. Repeat until ingredients have all been used. Sprinkle with shaved chocolate, then chill at least 4 hours before serving.
