Orange Chiffon Pie(For Diabetics)

In a large bowl, dissolve gelatin and sweetener in water.
Add orange juice.
Refrigerate for 1 hour or until thickened, but not set.
Beat on high for 3 minutes or until foamy.
Fold in Cool Whip until completely combined.
Pour into crust.
Cover and refrigerate 4 hours or until set.

Cheesecake For Diabetics

Blend all ingredients together; save skim milk until last. Beat at medium speed for 3 minutes or more until smooth.
Add enough skim milk to aid in smooth blending.
Pour into graham cracker crust.
Bake at 350\u00b0 for 35 to 40 minutes.
Cool on wire rack.
Serve chilled.

Parfait Pie For Diabetics

Bake pie shell and set aside.
Follow directions for making pudding except use 1 1/2 cups milk rather than two cups.
Put chocolate pudding in pie shell, then mix vanilla pudding also with 1 1/2 cups milk and pour on top of chocolate pudding in pie shell. Put Cool Whip over all and serve.

In food processor, combine cottage cheese and 1 cup yogurt. Cover and process until smooth.
Place remaining yogurt in large bowl.
Add pudding mix; whisk for 2 minutes or until slightly thickened, then add cottage cheese mixture and mix well.
Stir in remaining ingredients.
Refrigerate until serving.
Makes 14 servings.

Banana Pudding For Diabetics

Make pudding as directed on box.
Layer in dish the wafers, pudding and bananas, ending with the pudding on top.
Can substitute sugar-free chocolate pudding.
Pineapple in its own syrup can be added to vanilla pudding to make a refreshing dessert.

Sugar-Free Banana Pudding

Prepare Jell-O pudding mix as directed on box.
Layer pudding mix, bananas and cookies.
End with bananas and cookies.
Makes a delicious dessert for diabetics!

Sugar-Free Baked Apples

Wash and core whole apples or wash, core and slice in half apples.
Fill cavities or sprinkle on halves gelatin evenly, using whole package.
Sprinkle on butter flavored granules.
Bake in microwave, covered, until done or bake in a 350\u00b0 oven, covered, until done or desired crispness is reached.
Very pretty and tasty.
Great for diabetics.

Orange Peach Pie(For Diabetics)

In a saucepan, combine cornstarch, salt and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sweetener and gelatin. Cool. Fold in peaches. Pour into crust and refrigerate for 2 hours or until serving. Garnish with whipped topping.

Eggnog For Diabetics

In a large bowl, combine vanilla and milk.
In another bowl, combine the dry pudding mix, sweetener, and nutmeg.
Whisk the dry mix into the milk mixture until smooth. Refrigerate until serving.
**NOTE: Diabetic exchange is for one cup: 1 skim milk and 1/2 starch; 17 g. carbs.

Pineapple Fluff(Low-Fat For Diabetics)

Mix graham crackers, 4 packs Equal and margarine together. Press into a 7 x 11-inch pan. Bake at 350\u00b0 for about 10 minutes. Blend cream cheese, 6 packs sweetener, vanilla and Cool Whip. Stir in pineapple. Pour on top of cooled graham cracker crust. Refrigerate.

In a blender, combine the frozen yogurt, crushed ice,and milk, turning the machine off and on several times until blended, about 1 minute.
Add the strawberries and vanilla.
Blend for another 30 seconds, until strawberries are finely chopped.
Pour into a tall glass and serve.

Boil the first 6 ingredients together for 3 minutes; cool. Add the beaten eggs, soda, salt and artificial sweetener.
Add the flour and baking powder.
Drop by spoonfuls onto greased cookie sheet.

Mix together dry ingredients. Combine egg, orange juice, water and oil.
Add liquid to dry ingredients, stirring just until moist.
Let mixture rest for 30 seconds. Spoon or pour batter onto greased, hot griddle. Cook pancakes on the first side until bubbles appear on upper surface. Turn over and cook until bottom is golden.
