Pistachio Fluff - For Diabetics - cooking recipe

Ingredients
    1 (16 oz.) container 1% fat cottage cheese
    1 pkg. sugar-free instant pistachio pudding
    1 (32 oz.) carton fat-free, reduced sugar, vanilla yogurt, divided
    1 (8 oz.) carton reduced fat Cool Whip
    1 (20 oz.) can crushed pineapple in its own juice, drained
    1 (11 oz.) can mandarin oranges, drained
    1/2 c. halved maraschino cherries
Preparation
    In food processor, combine cottage cheese and 1 cup yogurt. Cover and process until smooth.
    Place remaining yogurt in large bowl.
    Add pudding mix; whisk for 2 minutes or until slightly thickened, then add cottage cheese mixture and mix well.
    Stir in remaining ingredients.
    Refrigerate until serving.
    Makes 14 servings.
