Spray 2 quart casserole with PAM or your choice
Cook potatoes in a 350 degree oven for about an hour, or until soft.
Place the potatoes in a greased casserole dish and add the milk and cottage cheese.
Mash together with a potato masher.
Gently stir in the remaining ingredients (you don't want to stir too much otherwise the potatoes will become gummy).
Cook in oven until heated throughout.
Peel and dice potatoes; place in bowl of cold, salted water. Drain potatoes and dry on paper towels.
Mix 1/2 cup butter, onions, soup, sour cream and cheese; stir well.
Add potatoes to mixture and pour into a 2 1/2-quart casserole dish.
Crush cornflakes, mix with remaining butter.
Sprinkle cornflakes and butter on top of potato mixture.
Bake at 350\u00b0 for 50 minutes.
Mix potatoes, ham, cheese, soup, pepper (I used a mixture of ground white, green, red, and black peppercorns), and onion in crockpot.
I cooked mine on high for 3 1/2- 4 hours.
Cook on low setting for 6-8 hours.
Recipe is done when the potatoes are completely cooked (soft texture, fork inserts easily).
I used my leftover sprial ham in this and my family almost finished it off the first night, YUM!

Note: You may also add 2 cups cooked ham (diced) or chicken (diced) to this recipe.
It also freezes well.
Slice unpeeled tomatoes 1/2-inch thick.
Dip each slice into beaten egg, then flour.
Fry in butter until lightly brown on each side.
Stack in casserole, 3 to 4 slices high, sprinkling each slice lightly with sugar, salt and pepper.
Bake at 350\u00b0 for 30 minutes.
Cook white sauce ingredients together until thickened.
Mix in other ingredients.
Place in greased casserole dish& bake@ 350 for 30 minutes.
