Corned Beef Cheese Ball

Crumble corned beef into a medium bowl. Add cottage cheese, scallions, green pepper, parsley and seasonings. Mix thoroughly. Chill several hours to blend flavors and to firm mixture. Remove mixture from bowl and shape into a ball. Spread cream cheese evenly over ball. Sprinkle paprika and parsley in a sizable sheet of plastic wrap (optional). Wrap ball in this plastic and refrigerate. Serve on a cheese board or tray with assorted crackers and thick cucumber slices for spreading. Garnish with sprigs of parsley, if desired.

Let cream cheese soften.
Chop all corned beef in food processor until fine.
Set aside.
Chop up green onions in food processor.
Stir 3/4 of the chopped corned beef and all the onion into the softened cream cheese and blend well.
Form into a ball. Chill 20 minutes, then roll it into the remaining corned beef. Better if made the day or night before.
Serve with crackers.
