Dot'S Civil War Cake

Combine and cook first 6 ingredients.
Bring to boil and boil 5 minutes; cool.
Add sifted, dry ingredients to apple mixture. Stir and blend only.
Add nuts.
Pour into greased and floured tube pan.
Bake 1 hour at 350\u00b0.
Serves 16.

"Civil War" Or Date Loaf Bread

Combine dates, water, soda, salt and butter and let cool and then add beaten egg, sugar, flour, vanilla and nuts.
Beat well and bake 1 hour at 350\u00b0 or until done in center.

Civil War Pound Cake

Mix the butter and sugar together well and beat in the eggs.
Sift the flour and salt together; mix in to the butter mixture until thoroughly blended.
Add the lemon peel, nutmeg, and brandy, mix well and pour into two small buttered loaf pans or one large one.
Bake in a moderate oven (350F) for about 1 hour or until cake tests done.

Pre-Civil War Pound Cake

Separate eggs.
Beat yolks until thick.
Add sugar.
After sifting three times, cream butter and flour, then add mixture of sugar, eggs and flavoring.
Beat well.
Beat egg whites until stiff.
Fold into former mixture.

Combine in large saucepan apples, raisins, water, sugars and Crisco and cook for five minutes. Remove from heat and cool thoroughly. Sift together in large mixing bowl the flour and spices. Add the apple-raisin mixture and stir thoroughly. Add the nuts and mix. Divide batter into 3 greased and lined loaf pans. (Line the bottom of pans with a strip of waxed paper.) Cover fruit with sugar and then make batter by creaming butter with sugar.
Add flour sifted with baking powder.
Add the fruit. Cover with boiling water.
(Batter will rise to the top while baking.)
Bake at 350\u00b0 approximately 1 hour until firm and lightly brown.

Cook together apples, raisins, butter and sugars with vinegar and water.
Cool, add 4 eggs.
In another bowl, mix flour, soda, salt and spices.
Mix well and bake at 375\u00b0 until toothpick punched in center of cake comes out clean.

1880 Civil War Applesauce Cookies

Cream shortening, sugar, eggs and vanilla.
Add applesauce and mix well.
Add sifted dry ingredients and blend well.
Drop by heaping tablespoonfuls onto greased cookie sheet.
Flatten and sprinkle with sugar.
Bake 10 to 12 minutes (do not brown).

Eggnog(Civil War Times, December 24, 1864)

Beat the egg yolks until light, then slowly beat in the sugar, cream, brandy and wine.
Whip the whites separately, then fold into other ingredients.
Sprinkle with nutmeg and serve.

Federal Bread(This Is A Civil War Recipe)

Cream butter and sugar.
Add vanilla, lemon extract and eggs. Beat well.
Stir in flour, soda and buttermilk.
Batter is very stiff.
Place in greased and floured loaf pan.
Bake at 375\u00b0 for 45 to 55 minutes.

Bertha'S Ginger Cookies(This Is A Pre-Civil War Family Recipe)

Mix together eggs, sugar, molasses and lard.
Dissolve in the hot water the soda, cocoa, ginger and salt.
Add enough flour to thicken; it usually takes about 5 cups.
Bake at 375\u00b0 for 8 minutes.
When cool, cover with boiled icing.

Bake about one hour or until tested with a straw that comes out clean.

Civil War Fried Sweet Potatoes

Peel and slice fresh sweet potatoes lengthwise and place in heated iron frying pan with 1/4 inch grease. Fry until golden brown and soft in the middle when poked with a fork. Goes good with sausage or bacon.
