Cornbread Dressing Holiday Special(Serves 12)

In a large bowl, stir together all ingredients.
No special order.
Cook approximately 2 1/2 hours at 300\u00b0, stirring once. Important: No stock from chicken or turkey.
No poultry fat! Oysters (1 pint) may be substituted for giblets.
Remove bay leaves at the time you stir (approximately 1 hour after cooking time).

Basic Chapati Recipe

Mix flour and salt.
Make a hole in flour and mix in water, making a dough.
Knead for five minutes, cover with wet cloth and refrigerate for an hour.
Heat a flat pan (non stick pans are not good for this as repeated use at high heats with no liquid tends to crack the Teflon) until smoking hot.
Roll out 1/2 a handful of dough into a flat round shape (3mm thick) and put into pan, cooking for 1 minute either side.
Once turned press gently with a towel, until brown.
Repeat and serve!

Basic Muffin Recipe

Preheat the oven to 350\u00b0F. Lightly grease a 12-cup muffin pan or line with paper liners.
Sift flour into a large bowl. Stir in sugar.
Whisk milk, butter, eggs and vanilla in a medium bowl.
Make a well in center of dry ingredients. Add milk mixture and mix lightly, until just combined. Do not over-mix. Spoon into prepared muffin pan.
Bake 15-20 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.

Basic Cornbread Dressing

Saute onions, celery and green peppers.
Soften bread crumbs with chicken broth.
Add sauteed vegetables and eggs.
Stir your dressing until it is smooth.
There is no way to tell if this has the right amount of salt unless you taste it.
You can vary this by adding 1/8 teaspoon Mexican chili powder or Creole seasoning gives it a good flavor.
Chopped parsley is always good.
Heat in 400\u00b0 oven until heated through.
Makes 6 to 8 servings.

Great Smoky Mountain Casserole

Saute meat and onion in bacon fat.
Add tomatoes, sugar, ketchup and beans, without draining if canned.
Simmer about 10 minutes.
Pour into 1 1/2-quart casserole dish.

Bake at 425\u00b0 about 25 minutes. Bread on top will be like cooked cornbread.

Cream the first 6 ingredients together.
Let stand 10 minutes and then add flour and cream of tartar.
Mix well.
This dough can be made into rolls, chilled and then sliced and baked.
It can be chilled and then rolled out for Christmas cutouts.
It can also be dropped by teaspoon and baked.
Cookies can be decorated with nuts, cherries or colored sugar before baking.
A great basic cookie recipe! Bake at 350\u00b0 for 10 to 12 minutes.

Chili Beef With Cornbread Dumplings

Heat oil in a large saucepan over medium-high heat. Cook onion, beef, garlic and spices, stirring, until beef is browned. Add kidney beans, tomatoes, beef stock, 1 cup water and sugar. Bring to a boil then reduce heat and simmer for 30 mins, stirring occasionally. Season to taste.
Meanwhile, to make the cornbread dumplings, combine flour, polenta and cheese in a medium bowl. Stir in corn, egg and milk. Roll level tablespoons of mixture into balls and place on top of chili. Cook, covered, for 15 mins, or until dumplings are cooked through.

Prepare pastry crust according to recipe.
Combine cornstarch, sugar, salt and chocolate in a saucepan.
Stir in milk gradually. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
Boil 1 minute.
Blend half the mixture into egg yolks.
Stir into mixture in saucepan; cook 1 minute, stirring constantly.
