The Basic Muffin Recipe - cooking recipe

Ingredients
    None None FOR THE BASIC MUFFIN
    3 cups self-rising flour
    6 tbsp (3/4 stick) butter, chopped
    1 cup sugar
    1 1/4 cups buttermilk
    1 None egg, lightly beaten
    None None FRUIT & SPICE VARIATION
    1 tbsp mixed spice, such as pumpkin pie spice
    1 cup mixed dried fruit
    None None DATE & ORANGE VARIATION
    1 cup seeded chopped dates
    1 tbsp grated orange peel
    1 cup whole wheat self-rising flour
    None None CHOCOLATE CHIP & WALNUT VARIATION
    1/2 cup chocolate chips
    1/2 cup chopped walnuts
Preparation
    Preheat the oven to 400\u00b0F. Grease a 12-cup muffin pan.
    Sift the flour into a large bowl; rub in the butter. Stir in the sugar, buttermilk and egg. Do not over-mix; the mixture should be lumpy. Spoon the mixture into the prepared pan.
    Bake for 20 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
    For the fruit & spice muffin, sift the mixed spice with the flour. Add the dried fruit with the sugar.
    For the date & orange muffin, substitute 1 cup of the self-rising flour with the whole wheat self-rising flour. Add the dates and orange peel with the sugar.
    For the chocolate chip & walnut variation, add the chocolate chips and walnuts with the sugar.
