Makes 22-23 cups cookie mix
Mix eggs and sugar.
Add rest of ingredients and mix well. Pour onto large cookie sheet.

Pre-heat the oven to 475 degrees.

Toss the carrots, oil and salt together, put them on the cookie sheet in a single layer, and place in the oven.
