Heat oil in a large, heavy-bottomed saucepan over medium-low heat. Add onion and garlic. Cook, stirring, for 5 mins. Add peas and cream. Simmer for 5 mins. Add Parmesan and season to taste. Set aside and keep warm.
Meanwhile, to make the sage and squash chapatis, preheat broiler. Place chapatis on 2 large baking trays. Broil for 2 mins, or until crisp. Flip over. Arrange squash over chapatis and top with sage and garlic. Season. Lightly coat in oil and broil for 5-7 mins, or until just beginning to char.
Serve sprinkled with ricotta.

Lightly spray the inside of muffin tins with nonstick spray. With a paper towel or tissue, gently wipe the spray inside each muffin cup.
Spread soft butter around inside of each muffin cup liberally.

Chop all the other herbs and seasonings and mash them into the soft butter.
Use this to coat the fish generously on each side.
Griddle, barbeque or grill it for 4-5 minutes on each side or till the skin is well browned and the flesh flaking off the bone.
Baste frequently with the butter that runs off.
Serve at once with fresh peasant bread and a salad or a simple green vegetable.
Brown rice in a little bit of oil until slightly toasted. Remove from pan.
Next, saute onions and celery in the same pan; add more oil, if needed.
Add rice and remaining ingredients and water.
Cover and cook about 30 minutes, until rice is soft (per recipe on box of rice).

Sift together flour and salt and reserve.
Measure butter and confectioners sugar in a large bowl.
Beat until light and fluffy. Beat in egg yolks and vanilla.
Add flour mixture and blend well. Add food coloring as desired.
If dough becomes too soft, add a little bit more flour.
Fill cookie press with dough.
Shape cookies on ungreased cookie sheet.
Bake 10 to 12 minutes at 375\u00b0. (Do not brown.) Cool.
These cookies freeze well.
Preheat oven to 375\u00b0. Measure out flour, baking soda and salt; set aside.
Measure sugar, brown sugar and vanilla into large bowl.
Mix until smooth with electric mixer.
Blend in soft margarine.
Then with mixer, blend in eggs, 1 at a time.
After mixture is smooth, blend in flour, a little at a time.
Stir in chips.
Drop onto large cookie sheet, about 1-inch apart.
Bake for 10 to 12 minutes.
Makes a big batch.
