Meat Loaves(Large-Quantity Recipe) - cooking recipe

Ingredients
    15 1/2 lb. ground meat (equal parts of 2 kinds, lamb, beef, pork)
    1 1/2 lb. finely chopped onions
    1 1/2 lb. finely chopped celery
    6 cloves garlic, minced or pressed
    3 lb. soft bread crumbs
    3 oz. salt
    1/4 oz. pepper
    24 eggs, slightly beaten
    1 1/2 to 2 qt. meat stock
Preparation
    Combine meat, onions,
    celery
    and
    garlic.
    Add
    bread crumbs, salt, pepper, slightly
    beaten
    eggs
    and
    stock.
    Mix well but do not over-handle.
    Mold\tinto
    loaves
    the width of baking pans, 3-inches high and 4-inches wide.
    Brush tops with bacon fat.\tBake, uncovered,
    and
    without water, in 325\u00b0 oven for 1 1/2 hours or until
    desired doneness is reached.\tDo not overcook.
    Strained pan juices may be made into gravy with any favorite recipe.
    Yields 50 servings, 5 ounces each.
