Shape each portion into a small loaf then place on a baking sheet lined with parchment. Roast in a preheated oven at 400\u00b0F for 25-45 mins.
To make the salsa, mix the tomatoes, garlic, cilantro and oil in a bowl and season. Serve the meatloaves with the tortilla chips and the salsa on the side. Dust the plate with a little paprika if desired.
