Mini Meatloaves - cooking recipe
Ingredients

1 1/4 lb ground beef
2/3 cup breadcrumbs
1 None onion, peeled and finely chopped
1 tbsp tomato paste
1 None egg, beaten
1 1/4 lb mozzarella, sliced
1 None small tomato, sliced
1/3 cup Parmesan cheese, grated
1 sprig fresh rosemary, halved
1 1/4 lb frozen potato wedges
1 tbsp white wine vinegar
3 tbsp olive oil
1 pinch granulated sugar
2 heads baby gem lettuces, leaves separated
5.25 oz cherry tomatoes, halved
Preparation

Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Combine ground beef, breadcrumbs, onion, tomato paste and egg. Season then form into 4 small meatloaves. Transfer to prepared pan. Arrange mozzarella and sliced tomatoes over 2 meatloaves and Parmesan and rosemary over remaining meatloaves. Bake with potato wedges for 25-30 mins, until meatloaves are cooked through.
Whisk vinegar, oil and sugar. Season then toss with lettuce and tomatoes. Serve with meatloaves.
