In a stand mixer, beat eggs and sugar until thick and creamy. Stir in flour and salt, in 2 batches. Transfer to a floured work surface and knead until smooth. Wrap in plastic wrap and let stand for 20 mins.
Divide dough into 16 portions. Roll each portion out on a floured work surface into a 5 inch round.
Heat oil in a large frying pan, shallow-fry dough rounds, 1 at a time, turning once, until golden brown. Drain on paper towels.
Combine sugar and cinnamon. Toss hot dough in cinnamon sugar until coated. Serve warm or cold.

Smear with 1 Tablespoon oil.
Let rise,covered with a breathable cloth,in a warm place until double its size.
Punch dough down and cut into 4 equal portions.
Heat oil as hot as you can make it.
