Fill each pepper to the top and bake for 35 minutes until peppers are tender.
Preheat nonstick on medium high heat skillet with Olive Oil.
Add onions and sweet potatoes to pan, mix well.
Let the hashbrowns cook without stirring till the bottom begins to brown.
Flip hashbrowns over and brown the other side.
Season with Salt and Pepper (you don't need much).
Add feta cheese at the end and incorporate into the onions and potatoes.

In a large bowl, mix sour cream, potato soup, onions, cheddar cheese, salt, and pepper.
Add hash browns and mix well. Pour into greased casserole dish.
Cook at 350 degrees for 55 minutes.

Grate the onion on the large section of a box grater into a bowl to retain the onion juice.

Drop 1 Heaping tablespoon Hash browns into medium hot skillet with 8 tablespoons of oil. Spread outward to create a cake about only 1/16\" thickness-do not crowd skillet. Crisp the bottom about 3 minutes, flip and cook about 2 minutes.
Drain on paper towel; keep warm on wire rack in warm oven as you cook additional batches.
