Sweet Potato Hash Browns - cooking recipe

Ingredients
    1 large white potato
    1 medium size sweet potato
    1 Tbsp. grated onions
    1 Tbsp. margarine
    1/2 tsp. salt
    dash of pepper
    1 Tbsp. water
    1 Tbsp. margarine
Preparation
    Peel and shred white and sweet potatoes (enough to make 3 cups potatoes).
    Add onions, 1 tablespoon
    margarine, salt and pepper.
    Place in a microwave-safe dish; add water and cover.
    Microwave on High 5 to 6 minutes.
    Rotate dish every 2 minutes.
    Stir and set aside.
    When cool enough to handle, shape and press into 2 x 3 1/2-inch patties.
    Melt 1 tablespoon margarine in a nonstick pan and fry hash browns over medium heat until golden brown on both sides.
    Serve immediately.
    Yield:
    3 to 4 servings.
    Approximately 145 calories per serving.
