For Pecan Pie, mix first 5 ingredients together with vanilla.
Pour filling into two unbaked pie crusts and sprinkle top of pies with chopped pecans. For French Lemon Pie, omit vanilla and pecans and add juice and finely ground rind of 4 lemons.
Bake at 350\u00b0 for 1 hour. (Filling will be slightly soft in center.)
ARIATIONS: If desired, double the recipe for pecan topping.
You can substitute

To Make Crust: Blend softened cream cheese, 1/2 cup butter and flour. Chill 1 hour.
Shape into 24 balls. Press balls into cavity of mini muffin tins, making small cups.
To Make Filling: Beat together egg, brown sugar and 1 tablespoon butter. Add vanilla and salt and beat till smooth. In each little crust bottom, sprinkle chopped pecans, add egg mixture to right before top and top with a whole pecan.
Bake at 325 degrees F (165 degrees C) for 25 minutes or till filling is set. Cool before removing from tins.
Preheat oven to 350.
For shells, beat butter and cream

Can add a little bourbon, not over 1/4 cup for double recipe.

Bake at 375\u00b0 for 35 minutes until filling is slightly firm.
