Rinse dried lima beans in a colander and remove any stones or other fishy looking, non-bean type matter.
In a Dutch oven, bring beans, ham and enough water to fill the pan 3/4 full to a boil. Reduce heat to medium-low and add the chopped onion, salt, pepper and a generous sprinkle of dried red pepper (like you put on pizza) to taste.
Cook over low heat, stirring occasionally, until beans are tender (may take from 1 to 3 hours, depending on personal taste).
Add additional water as needed to prevent mixture from sticking to pan.

Soak beans overnight.
Next day, drain and add water and bacon. Cook slowly until tender.

Brown onion and garlic in fat.
Add mustard, worcestershire sauce, chili powder and salt.

Alternate lima beans and sauce in greased casserole.

Gigantes (Greek Lima Beans)

Place the lima beans in a large saucepan. Pour enough water to fill to 2 inches above top of the beans. Allow to soak overnight.
Preheat oven to 375 degrees F (190 degrees C).
Place the saucepan over medium heat; bring to a boil; reduce heat to medium-low and simmer 20 minutes; drain. Pour the beans into a 9 x 13 baking dish. Add the tomatoes, olive oil, garlic, salt, and dill; stir.
Bake in preheated oven for 1 1/2 to 2 hours, stirring occasionally and adding water if the mixture appears dry.

Lima Beans In Tomato And Garlic Sauce

Put the lima beans in a large pot with about 2 quarts of water and some salt.
Bring the water to a boil, then reduce the heat and simmer the beans until they are tender, but don't let them get mushy.
Drain them and save the broth to use in a soup, it's delicious.

Combine beans with garlic salt in large saucepan.
Add enough water to cover.
Let stand overnight; drain.
Fry bacon in skillet until crisp.
Remove bacon to paper towels to drain.

May simmer on stove top if preferred.

In a large pot, combine the lima beans, ham hocks, water, cabbage and butter. Season with salt, pepper and garlic powder. Bring to a boil, then reduce heat to low and set a lid on top but leave a crack for steam. Simmer for 1 1/2 hours. Remove the lid, add the tomatoes and sausage; simmer with the lid on until beans are completely tender, 15 to 20 minutes.
