Lima Beans With Bacon - cooking recipe
Ingredients

3 c. dried lima beans
1 lb. slab bacon or salt pork
1/2 tsp. crushed red pepper
1 small onion
1 clove garlic, crushed
salt and pepper to taste
Preparation

Wash the lima beans and soak in cold water for about 1 hour (prolonged soaking makes the beans mushy).
Put the bacon or salt pork in a large pot.
Cover with boiling water and add the red peppers, onion, garlic and a little salt and pepper.
Cover and simmer until bacon is tender (about 30 minutes).
Drain the lima beans well.
Add to the bacon or salt pork mixture.
Taste and add more red peppers, salt and pepper if necessary.
Simmer covered over low heat for about 1 hour.
Add more water if necessary to prevent drying out.
Slice the bacon or salt pork and serve on top of the beans if desired.
