Promise Branberry Muffins

Heat oven to 400\u00b0.
Lightly grease 12 muffin cups.
In a large bowl soak cereal in milk for 5 minutes.
Stir in Promise, honey, berries, egg whites and cinnamon.
In another bowl, combine remaining ingredients.
With a rubber spatula, fold flour mixture into berry bran mixture, just enough to moisten.
Do not overmix. Evenly distribute among muffin cups.
Bake 20 minutes or until done.

Blueberry Muffins

In a large bowl, combine flour, sugar, baking powder and salt. Stir in blueberries.
Add milk, egg whites and Ultra Promise. Mix just until dry ingredients are moistened.
The batter will be lumpy.
Do not overbeat.
Spoon batter into 12 (2 1/2-inch) muffin cups (sprayed with Pam).
Bake at 400\u00b0
for 25 minutes or until tops spring back when lightly touched.
Serve warm.

Chocolate Chip Cookies

Preheat oven to 375\u00b0.
Mix sugars, Ultra Promise, vanilla and egg white in large bowl.
Stir in flour, baking soda and salt. Stir in chocolate chips.
Drop dough by rounded spoonfuls about 2 inches apart onto ungreased nonstick cookie sheet.
Bake at 375\u00b0 for 8 to 10 minutes or until brown.
Makes about 2 1/2 dozen cookies.

Creole Fish Orleans

In large skillet, melt Promise; saute onion, celery and garlic 3 minutes.
Stir in tomatoes, bay leaf, Worcestershire sauce, salt and hot pepper sauce.
Simmer 15 minutes or until thickened.
Add mushrooms.
Roll fillets.
Arrange in sauce.
Cover.
Cook 10 minutes longer or until fish is done.
Remove fish to serving platter.
Remove bay leaf from sauce; discard.
Spoon sauce around fish; sprinkle with parsley if desired.
Makes 4 servings.

Cherry Dump Cake

Pour can cherries in square cake pan.
Spread on bottom of pan. Then pour crushed pineapple on top of cherries and spread. Pour cake mix on top of pineapple.
Then melt 2 sticks of Promise margarine and pour over top of cake mix.
Bake at 350\u00b0.
Bake until it gets brown on top.

Cocoa-Oatmeal Cookies

Preheat oven to 350\u00b0.
Mix sugar, Promise, yogurt, water, vanilla, chocolate extract and egg whites in large bowl.
Stir in remaining ingredients.
Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased cookie sheet.
Bake 9 to 11 minutes or until almost no indentation remains when touched.
Makes about 5 dozen cookies.

Low-Fat Gooey Butter Cake

Mix cake mix (unprepared), 1/2 cup Promise and 1/4 cup Egg Beaters in bowl by hand.
Press in a 9 x 13-inch pan.

Beef Stew

Cook
in
Dutch
oven
or
6 quart pot.
Saute onion in Promise.
Add
beef and cook on medium heat until most of pink is gone.
Add\ttomatoes,
carrots
and potatoes, bay leaf and bouillon
cube.
Bring
to\tboil and then reduce to simmer for approximately 20 to 25 minutes or until vegetables are tender. Add pepper
and
check
for salt.
Add if necessary.
Stew is even better the second day.
Good served with garlic bread.

Apple Raisin Bran Muffins

Heat oven to 400\u00b0.

Creamed Chicken With Vegetables

In skillet, cook onion in Promise until tender.
Stir in soup and milk.
Add chicken; cook until tender.
Stir in vegetables and potatoes; heat through.
Makes 4 to 6 servings.

New York Cheesecake

Low-Fat Buttermilk Cake

Cream sugar and Promise.
Beat and add egg whites.
Mix dry ingredients and add alternately with buttermilk to creamed mixture.
Add vanilla.
Bake 1 hour and 25 minutes at 325\u00b0.
Works best in a Bundt cake pan.
Serve with warm jelly, Cool Whip or fresh fruit.

Chocolate Rice Krispy Cookies

In large mixing bowl, cream Promise and sugar; add egg whites and vanilla.
Beat well.
Add flour, baking powder and salt; mix well.
Stir in cereal and chocolate chips.
Bake in 350\u00b0 oven for approximately 12 minutes.

Easy Rolls

Mix yeast in 2 cups of water until dissolved.
Mix flour and shortening or Promise.
Add other ingredients, add water and mix well.
Pour into muffin pan.
Makes about 20 rolls.

New York Cheese Cake(Diabetic)

Chicken Italia

Wash and debone chicken breast.
Pat dry.
Coat with Italian bread crumbs, after seasoning with salt and pepper.
Place in a pan lined with foil.
Spray with Pam cooking spray to keep breasts from sticking.
Melt the Promise margarine and drizzle over the chicken breasts.
Sprinkle with rosemary.
Cover with foil and place in preheated oven at 350\u00b0 for 35 to 40 minutes.
