Place the pig tails in a large stock pot,
Wash the pig tails or neck bones and trim off the fat.
Place them in a pot and cover with water.
Add the seasonings.
Let come to a boil.
Turn the heat to low and cook slowly until tender, about 1 1/2 hours.
Put pig tails in roaster pan with onion, celery, green pepper, vinegar, garlic powder, salt and pepper. Cover pan with water. Put in oven at 350\u00b0 until very tender.
Pour off all liquid. Add barbecue sauce and hot chili pepper.
Bake with lid off pan for 10 minutes.
Let beans soak for more tender beans and then bring a large boiler of water to a boil.
Pour beans in boiling water.
Turn heat to medium and let cook about an hour.

Cooking time will vary from 5-10 minutes per side, depending on size of tails.
Serve with melted butter laced with lemon juice.
In a large saucepan, add the first 4 ingredients, COVER THE TAILS WITH WATER and boil for 1/2 an hour. Drain, cool and remove excess fat.
Meanwhile, mix the tomato sauce, garlic, teriyaki sauce, and soya sauce and in a large roasting pan and then add tails.
Bake at 350F for several hours until meat falls off the bone.
