Southern Red Beans - cooking recipe
Ingredients

1 lb. kidney beans
1 large bell pepper
1 large onion
1/2 clove garlic
1 stick butter or margarine
1/2 lb. bacon
1 medium pkg. pig tails
1 tsp. salt
1 tsp. pepper
Preparation

Let beans soak for more tender beans and then bring a large boiler of water to a boil.
Pour beans in boiling water.
Turn heat to medium and let cook about an hour.
Chop seasonings very fine, and salt and pepper to your taste.
Boil pig tails at same time until you put the beans on.
Cook pig tails until tender. Fry bacon.
Pour 1/2 grease from bacon into the cooking beans; add pig tails and one stick of butter or margarine.
Cook another hour on low.
