Greek Cabbage Salad With Ground Beef And Yogurt Dressing

Mix garlic and yogurt then set aside. Combine cabbage with sugar and vinegar and season to taste then set aside for 30 mins to marinate. Add bell peppers, cucumber, olives and parsley. Season with olive oil.
Heat canola oil in a large skillet, brown ground beef, stirring. Season with gyros spice then add to salad along with onions. Season salad to taste then garnish with seasoned yogurt and pickled green peppers. Serve remaining yogurt on the side.

Red Pepper And Onion Chutney

Heat the oil in a large pan. Add the onion and pepper and saute over medium heat for 5 mins. Stir in the sugar, 2-3 tsp salt, vinegar, wine and paprika. Bring to a boil, cover and simmer for 1 hour. About 10 mins before the end of cooking time, remove the lid and let the chutney reduce so that there is no excess liquid. Stir in the pickled green peppercorns.
Pour into 4 sterilized jelly jars, cool then cover and seal tightly. Use within 3 months.

When ready to serve, fill each glass with ice.
Add 1 ounce of vodka to each glass, then fill the glass with the bloody mary mix. Stir well, and garnish each glass with a pickled green bean and a pickled okra.

Pickled Green Tomatoes

Combine tomatoes, onions and salt in large bowl.
Let stand for 1 hour.
Combine green pepper, vinegar, sugar, celery seed and mustard seed in a large pan and bring to boil.
Add tomatoes and onions and bring to boil again.
Pack pickles into hot jars; cover with boiling vinegar mixture.

Pickled Green Tomatoes(Kosher Style)

Use small, firm, freshly-gathered green tomatoes.
Wash, dry and pack in sterilized jars.
Add a bud of garlic, 1 stalk celery and 1 green pepper (cut in fourths) to each quart jar.
Combine water, vinegar, salt and dill.
Boil together for 5 minutes.
Pour hot vinegar mixture over tomatoes to within 1/2-inch of the top of the jar.
Adjust screw band firmly tight.
*Process in boiling water bath 15 minutes.
Liquid enough to fill 6 quarts.
Tomatoes will be ready for use in 4 to 6 weeks.
