Feed it baked sweet potatoes and cornbread for about a week.
Next, kill it by breaking its neck.
Skin it; remove entrails, cut off tail and ears and wash it good, inside and out.
Another way to clean it is to dip it in water and roll it on oak ashes.
Keep it damp.
Rub it with lard until it gets real clean.
Roast Opossum:
The opossum is a very fat animal
Wash opossum inside and out and salt.
Heat lard in roasting pan.
Stir-fry garlic, onions and ginger.
Heat until starts to smoke.
Shake flour over opossum and brown in lard for two minutes.
Place opossum in roasting pan with paws crossed over chest, adding carrots, onions, potatoes and celery.
Add stock and sherry and cook at 325\u00b0 for 2 hours.
Add peas.
Recover and heat 8 more minutes.
Best served with rice, turnip greens and corn bread.
Serves 8 to 12 or whoever you can get to eat it!
Boil opossum until tender.
Bake sweet potatoes until tender. Place meat in a roasting pan, season with salt, pepper, garlic powder and thyme.
Bake, covered, at 350\u00b0 for 1 hour.
Uncover and bake further until browned.
Salt and pepper the opossum.
Saute chopped onion in vegetable oil.
Add bread cubes, Worcestershire sauce, garlic powder and some sage to taste.
Add some water and mix thoroughly.
Stuff the opossum cavity with this stuffing and sew up.

Roast, uncovered, at 350\u00b0 for 1 1/2 hours.
Place vegetables around the opossum, salt and pepper to taste and roast an additional hour or until the meat and carrots are tender.
Put skinned and cleaned opossum in large kettle, cover with water.
Add salt, peppers, onion, and bring to boil; reduce heat, and simmer for 30 minutes.
Remove meat, place in roasting pan. Increase heat and boil water mixture until only 3 cups remain. Pour over meat in roasting pan.
Cover and roast in oven at 350\u00b0 for 30 minutes.
Add sweet potatoes and celery.
Baste meat, cover, and roast for an additional 30 minutes or until tender.
Mix all ingredients and stuff opossum with it.
Sew up opening with large needle and coarse thread.
Roast in oven roaster on wire rack at 350\u00b0 until tender and richly brown.
Clean and boil to tender, drain water off and place in baking container.
Bake at 500\u00b0 for one hour with sweet potatoes placed around the opossum.
Salt and pepper to taste and serve while hot.
Clean opossum.

Parboil until tender. Season with salt, pepper and red pepper.
Sprinkle garlic and onion over top and bake at 350\u00b0 for 30 minutes.
Meat is greasy; eat only small amounts.
Place the opossum in a baking pan lined with aluminum foil. Prepare the barbecue sauce by combining the remaining ingredients. Baste the animal with the sauce.
Cover and bake at 350\u00b0 for 2 1/2 hours, basting frequently with sauce.

Bake until brown, basting with drippings. Serve with cornbread and country salad.

Turn the heat down, cover and simmer for about an hour.

Make Rich Tea Biscuit dough, adding more milk to make a drop biscuit dough. Spread the dough 1/2 inch deep in an oblong 9 x 12-inch baking dish. Peel and pare apples; cut in eighths. Press apple slices into top of dough very close together. (It won't hurt if more than a layer thick.) Dot with butter or oleo. Mix cinnamon and sugar together.
Sprinkle over apples. Bake at 350\u00b0 for 30 minutes or until done. Serve warm or cold with Lemon Sauce (recipe follows).
