Sweet Potatoes And Opossum - cooking recipe

Ingredients

1 cleaned opossum
salt
pepper
water
4 medium sweet potatoes
butter

Preparation

Clean opossum with damp cloth.
Rub inside and out with salt and pepper.
Lay possum in roasting pan on his back.
Baste with melted margarine.
Add 1/2 cup water; cover and bake at 350\u00b0 for 3/4 to 1 hour.
Split peeled potatoes in half lengthwise.
Place around possum.
Add water as needed.
Bake for another 20 minutes, basting occasionally.
Uncover and let them finish cooking until golden brown and tender.
