Roast Opossum In Sauerkraut - cooking recipe

Ingredients
    1 opossum, dressed
    salt and pepper
    1 tsp. garlic powder
    1/2 c. white wine
    3 lb. sauerkraut
    1 onion, sliced
    1 c. beer
    1/4 lb. salt pork
    1 tsp. caraway seed
Preparation
    Cut the opossum into serving size pieces.
    Salt and pepper. Place on a rack in a roasting pan.
    Add the wine and garlic; roast for about 2 1/2 hours at 325\u00b0.
    Add the sauerkraut and the remaining ingredients.
    Bring to a boil.
    Turn the heat down, cover and simmer for about an hour.
    Serve with boiled potatoes.
