Roast Opossum With Vegetables - cooking recipe
Ingredients

1 opossum, dressed
salt and pepper
1 onion, chopped
vegetable oil
1 c. bread cubes
1/2 tsp. Worcestershire sauce
1 tsp. garlic powder
sage
bacon slices
3 potatoes, peeled
2 carrots, halved
3 small onions
Preparation

Salt and pepper the opossum.
Saute chopped onion in vegetable oil.
Add bread cubes, Worcestershire sauce, garlic powder and some sage to taste.
Add some water and mix thoroughly.
Stuff the opossum cavity with this stuffing and sew up.
Place on a rack in a roasting pan and place bacon strips across the back.
Roast, uncovered, at 350\u00b0 for 1 1/2 hours.
Place vegetables around the opossum, salt and pepper to taste and roast an additional hour or until the meat and carrots are tender.
