Cut out centers of Cookbook Brown 'N Serve rolls.
Fill with mixture of chicken or tuna salad.
Place in hot oven at 375\u00b0 until golden brown.
Serve with punch.
Boil chicken, saving broth. Debone and chop chicken. Spray a 9 x 13-inch pan. Dip tortillas in broth and line pan.
Combine all the rest of the ingredients except the cheese.
Layer tortillas and chicken mixture.
Put cheese and chili powder on each layer. Bake in a 350\u00b0 oven for 45 to 60 minutes. After cooking begins, cut through layer with big spoon.

In a blender or food processor, puree the black soybeans and chicken broth until the consistency is relatively smooth.
In a medium saucepan, heat the coconut oil on medium or medium-low heat and saute the onion in the oil until just beginning to turn golden--do not brown or burn.
Carefully add the bean puree to the saucepan--it may pop a bit, so watch out! Heat the beans. Stir in salt and pepper. Keep warm until serving time (or reheat on stovetop). You may wish to stir in a bit more chicken broth if the beans become too stiff.
Saute onion in oleo; add soup and heat slowly with milk and jalapeno relish.
In 13 x 9-inch pan, line the bottom with Tostitos chips.
Pour soup mixture over chips.
Add chicken and top with cheese.
Bake at 350\u00b0 for 30 minutes.
Serve with Spanish rice and corn.

Pour tomato sauce into a small saucepan over medium heat. Add spices and stir. In a cup, combine warm water with flour until it forms a paste, then gradually add to tomato mixture while stirring. Let simmer for 10 minutes, to thicken. Cool the sauce then spoon over enchiladas or layered tortillas and cheese, then prepare according to enchilada recipe directions (usually, heat in 425 degree oven for about 15 minutes). Muy bueno!
On high heat, place tomatoes and jalapenos directly on stovetop until slightly roasted.
Remove from heat.
Peel and slice. Combine with avocados, garlic, onions, cilantro, garlic salt and pepper into a food processor.
On low speed, blend ingredients until they appear blended into a lumpy texture, not creamy.
(I prefer to hand mix in a mocahete, which adds just the right authentic flavor!)
Serve with tortilla chips or as a topping on your favorite Mexican dish!

Drain and rinse the two cans of black beans.
In a large skillet, heat oil over medium high heat: Cook onion, garlic, and comino (cumin)for five minutes until softened.
Add beans and cook while stirring often, for five more minutes until hot and heated though well.
Stir in fresh Cilanto/coriander, lime rind, and lime juice.
Serve as a side dish with a mexican meal or do yourself a favor and wrap into a steamed flour tortilla with Mexican rice. Muy bueno -- Amigos/amigas!

Roll one-half the pastry on floured surface into circle 1-inch larger than inverted pie pan.
Ease pastry into pan.
Combine cornstarch, Equal for Recipes, cinnamon, nutmeg and salt; sprinkle over apples in large bowl and toss.
Arrange apples in pie crust. Roll remaining pastry into circle large enough to fit top of pie. Place on top of pie; seal edges, trim and flute.
Slash top crust in pattern of your choice.
Bake in preheated 425\u00b0 oven until pastry is golden and apples are tender (40 to 50 minutes).
Cool on wire rack.
Place chicken breasts on baking sheet with sides (to catch the grease), skin side up.
Rub olive oil on breasts, sprinkle with salt and pepper.
Bake at 350\u00b0 for 45 minutes.
Cool, then chop or slice to use in your recipes.
