Easy 'Charro' Beans

Fry bacon strips in a large skillet over medium heat until crisp. With a slotted spoon, remove bacon to paper towels. Reserve 1/2 cup bacon drippings.

In a large Dutch oven, combine cooked beef, beans, onion, bell pepper, garlic salt and chili powder.
Let simmer.
In a bowl, put stewed Mexican-style tomatoes and green chilies, then mix together with your hands until well blended. Add mixture to beans and cook on medium heat for 30 minutes. Serve with tortilla chips.
Makes 6 servings.

Cook ground beef until brown; drain.
Mix taco mix with beef. While this is simmering, mash potatoes and add corn and beans (drained).
Pour into deep pan.
Then put meat on top.
Fix cornbread mix according to directions on package.
Pour on top and cook at 350\u00b0 until cornbread is done (about 45 minutes).

Mexican Pie

Saute the onion and green pepper with the ground beef; drain. In cake pan, layer chips (break them up a little so they will lay flat).
On top of chips, beef mixture; on top of ground beef, add the beans; on top of beans, add the Ro-Tel and on top of Ro-Tel, add soup.
Top with any cheese and sprinkle with chili powder. Cook until thoroughly heated and cheese is melted.

Brown ground beef; drain.
Add peppers, beans, corn, chili powder, garlic powder and salt and pepper to taste.
Simmer until done.
Spray bottom of casserole dish with Pam cooking spray. Crush chips along bottom of pan.
Add filling.
Spoon sour cream on top, then add cheese.
Place in oven at 350\u00b0 until cheese melts.
Serve over lettuce.

Pour over tortillas; add grated cheese over layered tortillas.
Top with stewed tomatoes or more green chilies.
