Low Fat Chocolate Orange Cake

Preheat the oven to 350\u00b0F
Spray a bundt pan,or a 8x8 pan with nonstick vegetable spray.
In a medium bowl, beat the egg for 2-3 minutes at medium speed.
Add sugar gradually till the mixture is pale yellow and is thickened.
Add remaining ingredients except the garnishes.
Pour into the pan and bake about 30 minutes, till it is tested with a toothpick that comes out clean.
Cool completely, turn out onto a plate and sprinkle with the cocoa and orange peel.

Fish Burgers (Low-Fat)

In a large bowl combine all ingredients except the crushed croutons; mix well to combine.
Shape into about 10-12 patties.
Coat each patty with the crushed croutons or crushed cornflakes.
Place the patties on a baking sheet and chill for 2 hours.
Pour oil to a depth of about 1/2-inch into a large heavy skillet, heat to medium heat.
Fry the patties about 2 minutes on each side, or until golden; drain on paper towels.

Saute the mushrooms in a non stick pan for 2-3 minutes until softened.
Add the sour cream, yoghurt and black pepper.
Mix well and heat through.

*I sometimes sprinkle with a little chopped parsley for added colour and flavour.

Preheat the oven. I do mine to 160 degrees but it is fan-assisted, so if yours isn't I would do 180 or even 200.
Use the low-fat spread to grease an 8-inch loaf tin.
In a large bowl, whisk the egg-whites to a froth.
In another bowl, stir the flour, mango puree, vanilla essence and egg yolk together.
Fold the whisked whites into this mixture.
Pour into the greased tin and bake for 30-40mins.
Let cool, then slice.

In a large deep saucepan heat the broth to a boil.
Lower the heat to low and slowly add the egg white to the broth while stirring.
Add the Splenda, spinach and green onion and immediately remove from the heat and stir lightly.
Cover pan and allow it to stand for 2-3 minutes.
Serve.

Low-Fat Oven-Fried Chicken

Combine chicken pieces and buttermilk in a large zip-top bag and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 450\u00b0F.
Combine flour and seasonings in another large plastic bag.
Remove chicken from first bag (discarding marinade) and shake in flour mixture one piece at a time.
Shake off excess flour.
Place chicken pieces on a baking sheet lined with parchment paper.
Lightly coat chicken with cooking spray.
Bake for 35 minutes or until done, turning after 20 minutes.

Low Fat Coffee Cake

Preheat oven to 360.
Grease a 3 quart pan.
Mix all \"cake\" ingredients together
Spread dough in pan.
Mix topping ingredients together with mixer until crumbly.
Sprinkle topping over dough.
Bake for 22-24 minutes.
Let set to cool.

Low Fat Blueberry Muffins

Preheat oven to 400 degrees. Coat a nonstick 12-cup muffin pan with cooking spray or line with paper cups.
In a large bowl, stir flour, sugar, baking powder, baking soda and salt together.
In a small bowl, combine milk, canola oil and egg.
Make a well in the center of the dry ingredients and add milk, oil and egg mixture. Stir until just moist. Fold in blueberries.
Fill muffin cups 2/3 full and bake 18-20 minutes until golden.
Cool on wire rack.

Low Fat Taco Salad

Heat turkey chili in microwave for 2 minutes, stirring halfway through.
Spoon half of turkey chili onto tossed salad.
Top with cheese.

Low Fat Coleslaw

Combine vegetables in a salad bowl. Whisk together yogurt, mustard and 2 tbsp water and season to taste. Pour over vegetables and toss to combine. Cover and chill before serving.
