Preheat the oven to 400\u00b0F. Lightly grease 2 large baking pans.
Place flatbreads on prepared pans. Spread with pizza sauce. Top with onion, leftover meat, bocconcini, pumpkin and mozzarella.
Bake 15-20 mins, or until golden and crisp. Top with arugula and cut into slices to serve.
Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
Spread mayonnaise onto 1 side of each bread slice. Layer Swiss cheese, turkey, and spinach onto the mayonnaise-side of 1 bread slice; top with second bread slice. Place sandwich on a baking sheet.
Broil in the preheated oven until heated through and cheese is bubbling, about 5 minutes.
Bring chicken broth (or water with chicken bouillon) and leftover meat sauce to a boil in a large pot, over high heat. Add orzo pasta and stir frequently so it doesn't stick at the bottom.
When the soup comes to a boil, reduce heat to medium and simmer till the orzo is cooked, about 12-13 minutes or according to package instructions.
Remove pot from heat, stir in butter and cheese, and serve immediately. Top with extra cheese, if desired.

1. If not using leftover potato, cube a russet potato and boil in water until tender. Drain and add in garlic pepper and garlic salt.
