Florida Keys Red Snapper

Preheat oven to 350\u00b0.
Rub fish lightly with oil and sprinkle inside and out with salt and pepper.
Melt butter and saute onion, green pepper and scallions until onion is cooked.
Stir in breadcrumbs, parsley and toasted almonds, seasoning with salt and pepper.
Stuff the fish with mixture and tie with string.
Place the fish on a length of aluminum foil and cover with alternating, slightly overlapping, slices of tomato, onion, orange and lime. Bring up edges of foil and secure it envelope style.

In a blender blend all ingredients except 151 rum at high speed along with one tray of ice cubes until frothy.
Pour into tall glasses and top with a drizzle of 151 rum.

Florida Keys-Style Citrus Chicken

Thoroughly wash the chicken; pat dry with paper towels. Set aside.
Whisk together the citrus juice (marinade) ingredients in a small mixing bowl. Pour a 1/4 cup of this mixture into a large resealable plastic bag, and reserve the remaining. Add the chicken to the bag, seal and refrigerate 4 to 24 hours. Turn occasionally.
Meanwhile, peel the orange; cut in half lengthwise then cut crosswise into slices. Set the segments aside.

Florida Champagne

In saucepan, combine sugar and water; boil 3 minutes.
Chill. In large punch bowl, combine chilled juices and sugar water mixture.
When ready to serve, add ginger ale to juices.
Place flavored ice ring or ice cubes in punch bowl.

Florida Ambrosia

Section grapefruit and 2 oranges.
Slice remaining peeled orange crosswise, 1/4-inch thick.
Combine grapefruit, oranges and strawberries.
Sprinkle with sugar, if desired.
Turn into serving bowl and sprinkle with coconut.

Santa Fe Salsa

This is very easy!
Chop up the peppers & toss in a large mixing bowl.
Add cans of beans, corn & olives.
Cut the avocados in half, scoop out the goods & toss the seed, chop as big or small as you like, mine were about the size of corn (Florida's avos are less expensive with the same great nutrients, when choosing avos you really cant go wrong, not too firm, not too mushy).
Mix in Lime Juice, EVOO & Vinegar

Florida Orange Chiffon Pie

Combine pudding, concentrate, water and rind.
Whip topping according to directions and add to above mixture.
Place in an 8-inch prebaked pie shell and refrigerate.

Avocado Fans With Black Olive Vinaigrette

Florida Sunshine Salad

Wash and thoroughly dry the romaine lettuce.
Tear into pieces and put into a large bowl.
Slice the avocado onto the lettuce. Peel and separate the grapefruit into sections, removing all membranes.
Put on top of the avocado.
Crumble the Blue cheese on top of the grapefruit.
Just before serving, add the fruit salad dressing and mix lightly.

Saucy Florida Beans

Saute celery in melted butter until tender.
Stir in flour and seasonings.
Gradually blend in milk; cook over low heat, stirring frequently until thickened.
Add cheese and stir in drained green beans and pimento.
Heat thoroughly over low heat.
Serves 4 to 6.

Fresh From Florida Guacamole

In a medium sized bowl, combine the lime juice, cumin, garlic, hot sauce and cilantro. Fold in avocado, onion, bell pepper, and tomatoes. Adjust seasoning with kosher salt and pepper. Refrigerate up to one hour for best result, or serve immediately with tortilla chips and fresh cut veggies.

Florida Orange Chiffon Pie

Combine pudding, concentrate, water and rind.

Fresh Florida Corn Chowder

Cut kernels from cobs; set aside.
In large pan, melt butter over medium heat.
Saute onion and celery for about 3 minutes or until tender-crisp.
Stir in flour; cook and stir for 1 minute. Slowly stir in milk, salt and pepper.
Bring to the boiling point, stirring constantly, until mixture thickens slightly.
Stir in corn and simmer, covered, for 5 minutes.
Stir in cheese; heat until cheese melts.
Serve at once in bowls and sprinkle with paprika.

Florida Calico Scallops Supreme

Melt butter in baking pan while oven is preheating to 350\u00b0. Remove pan.
Place washed scallops in melted butter and top with bread crumbs.
Dot with butter and sprinkle with paprika.

Florida Lobster

Preheat oven to 400.
Prepare lobster-split down back, not all the way through so can be butterflied.
Place all other ingredients in bowl and blend. Spread mixture over tails.
Cook about 12 minutes depending on size of tails.
You can melt any leftover spread and serve for dipping.

New York Cheesecake

Florida Spinach Salad

Just before serving, combine spinach, orange sections and cashews with Florida Blue dressing.
Serves 6 to 8 (dressing).
In electric blender, combine Blue cheese, salad oil, grapefruit juice and seasoned salt; cover.
Blend until smooth or use a small bowl and an electric mixer.
Stir in sour cream.
Cover.
Chill at least 1 hour to blend flavors.
Makes 2 1/2 cups.

Florida Grapefruit Salad

Arrange salad greens in serving bowl.
Place chunks of crabmeat in middle.
Surround with grapefruit sections.
Serve with Grapefruit Dressing.
Makes 6 servings.
