Fresh Florida Corn Chowder - cooking recipe
Ingredients

3 c. fresh Florida corn, 6 ears (canned corn can be used)
4 Tbsp. butter
1/2 c. chopped celery
1 qt. milk
1/4 tsp. white or black pepper
2 c. mild Cheddar cheese, shredded
paprika
1/2 c. chopped onion
3 Tbsp. flour
1 1/4 tsp. salt
Preparation

Cut kernels from cobs; set aside.
In large pan, melt butter over medium heat.
Saute onion and celery for about 3 minutes or until tender-crisp.
Stir in flour; cook and stir for 1 minute. Slowly stir in milk, salt and pepper.
Bring to the boiling point, stirring constantly, until mixture thickens slightly.
Stir in corn and simmer, covered, for 5 minutes.
Stir in cheese; heat until cheese melts.
Serve at once in bowls and sprinkle with paprika.
