Heat olive oil in a 2-quart saucepan over medium heat; cook and stir onion, red bell pepper, 1/2 of the tomato, and garlic until onion is translucent, 5 to 10 minutes. Mix black beans, water, salt, chili powder, paprika, and black pepper into onion mixture; simmer until heated through, about 10 minutes.
Remove saucepan from heat and stir cilantro and remaining tomatoes into bean mixture; serve over brown rice.
Combine onion, broccoli, celery, and garlic in a food processor.
Saute in sprayed skillet with a little water: onion, peppers and garlic.
Add beans and liquid.
Simmer until desired consistency, about 15 to 20 minutes.
Add a few drops hot sauce and to taste.
Or add cumin if desired.
Serve beans over cooked rice with hot sauce.
Cook the brown rice in salted water or broth for 40 minutes.
You will have two and a half cups of cooked rice.
Transfer the rice to a microwave proof dish.
Add the chopped onion, lime juice and drained beans to the rice.
Crush the clove of garlic into the mixture, then salt and pepper to taste.
Combine ingredients well, and reheat in the microwave for about 6-8 minutes, then garnish with reserved cilantro to serve.

Heat the olive oil and saute turkey strips for about 10 mins, turning frequently. After 5 mins, add the onion, garlic, tomatoes and white beans. Season with salt, pepper and thyme. Drain the green beans, and serve on top of the turkey and vegetable mix. Serve with the rice.

Heat oil in large saucepan over medium-high heat. Saute onion and chorizo until onion has softened, 2-3 minutes. Add garlic and rice, stirrirng to coat rice in oil. Stir in tomatoes and broth and bring to a boil. Reduce heat, cover and simmer until all the liquid is absorbed, about 15 minutes.
Remove from heat; gently stir in black beans and corn. Cover and let stand 5 minutes. Garnish with green onions.
Cook rice according to package instructions.
Rinse black beans in a colander.
Saute onion until soft in olive oil.
Add celery and red or green pepper and garlic.
Cook only until slightly soft.
Add cooked rice, tomatoes, black beans and any optional ingredients desired.
Put into casserole dish, sprinkle with cheese.
Heat in oven or microwave until cheese is melted. This is a great side dish or terrific filling for burritos.
Just add salsa, lettuce, tomato and sour cream.
