Black Beans And Rice - cooking recipe

Ingredients
    1 Tbsp. olive oil (120 cal.)
    3 cloves garlic, minced
    1/2 medium onion
    1 medium green pepper, chopped
    1/2 medium red pepper, chopped
    1 Tbsp. Cajun vegetable seasoning
    dash of cayenne pepper
    black pepper to taste
    1 (16 oz.) can tomatoes, drained (optional)
    1 pkg. chicken bouillon in 3/4 c. water (10 cal.)
    1 lb. smoked turkey sausage, thinly sliced or 1 lb. light turkey/pork sausage, browned
    1 Tbsp. vinegar
    2 (16 oz.) cans Progresso black beans
    4 c. cooked white or brown rice
Preparation
    Saute garlic in olive oil with onion, green and red pepper. Stir in tomatoes and chicken broth.
    Add turkey sausage and vinegar.
    Simmer 5 minutes.
    Add black beans and simmer 5 more minutes.
    Serve over cooked white or brown rice.
    Serves 8.
