Rolled Oats Pancakes (Gluten Free)

Microwave rolled oats and milk for 1 minute 45 seconds on high, then 3 minutes on 40% power.
Whisk together dry ingredients. Stir together wet ingredients until the egg is blended in well adding the the microwaved oats once they have cooled a little.
Stir together the wet and dry ingredients until well blended and let sit 2 minutes before cooking.
Heat a non-stick skillet or griddle to medium low heat. Cook 1/3 cup pancakes 2-3 minutes on each side.

1 Mix milk with vinegar, leave it for 5 minutes.
2 Add egg, olive oil, and vanilla extract to milk mixture.
3 Add flour mix, sugar, baking powder, baking soda, salt. Mix together.
4 Cook in the skillet till golden brown on both sides.
5 Note: I use Bette Hagman's original gluten-free flour mix.
2 parts white rice flour, 2/3 part potato flour, and 1/3 part tapioca flour.

Bette Hagman’S Four Flour Pastry (Gluten Free Pie Crust)

In a medium bowl whisk together the flours, xanthan gum, baking powder, salt and sugar. Cut in the margarine and Crisco with a pastry cutter or two knives in small pieces until you have shortening the size of lima beans (not cornmeal).
In a separate bowl, beat together the egg, vinegar and 3 tablespoons of the ice water with a fork. Pour egg mixture into the dry ingredients and stir with your fork (about 20-30 seconds). Mile-High Apple Pie

Roll one-half the pastry on floured surface into circle 1-inch larger than inverted pie pan.
Ease pastry into pan.
Combine cornstarch, Equal for Recipes, cinnamon, nutmeg and salt; sprinkle over apples in large bowl and toss.
Arrange apples in pie crust. Roll remaining pastry into circle large enough to fit top of pie. Place on top of pie; seal edges, trim and flute.
Slash top crust in pattern of your choice.
Bake in preheated 425\u00b0 oven until pastry is golden and apples are tender (40 to 50 minutes).
