Portion batter into greased or lined cupcake tin holder.
Bake 23-25 minutes or until toothpick inserted into cupcake comes out clean. Let cool completely before icing.
While cupcakes are baking, combine all ingredients for icing together in mixing bowl, using electric mixer. Ice cupcakes. Serve.

Cream butter until smooth; gradually blend in 3 cups of sugar and salt, adding strawberry juice and cream from time to time to produce a smooth spreading consistency.
Spread on cakes, serving out part of the icing.
Add rest of sugar to make the mixture stiff enough to hold its slices of strawberry.
Enough icing for 2 (8-inch) layers or 16 small cupcakes.
Mix all ingredients together in a large bowl and beat for 2 minutes. Pour into 3 greased and floured 9-inch cake pans. Bake for 30 to 35 minutes. Cool in pan 5 minutes before turning out. Let layers cool completely before icing with Strawberry icing.

I had to make a double batch of fudge icing to get the right thickness of icing for this cake. The icing recipe I used was a combination of 2 different recipes.
