The Best Almond Flour Blueberry Muffins

Pre-heat oven to 350°F.
Place all ingredients excluding blueberries into your food processor and blend until smooth.
Once completely mixed fold in blueberries.
Spray muffin tin or mini muffin tin with a healthy, non-stick cooking spray.
Evenly scoop batter into muffin tin.
Bake for 25 minutes.
Remove from oven and place on cooling rack.

Quick And Easy Ham Casserole

Cook egg noodles in boiling water with 1 tsp salt. Drain.
While the noodles are cooking, microwave peas 5 minutes; drain any accumulated water and set aside.
Combine ham, cheese, soup, milk and mustard in a 3-qt casserole while the peas are cooking.
Add noodles and peas; stir to blend. Microwave on high 6-8 minutes, stirring once.
Serve immediately.

Healthy Hamburger Casserole

Soak rice in 3 cups of water for 1 hr in rice pot, then cook rice.
Brown, rinse, and drain ground beef - return to pot.
Season ground beef.
Sautee onions, celery, and garlic with seasoned ground beef.
Add mushrooms, cream of mushroom soup, cream of chicken soup, and 1/4 cup of water to pot - mix well.
Add rice to the pot - fold in (don't stir or you will break up the rice).
Place rice mixture in casserole dish.
Bake at 325 (convect) for 45 min
If you don't have a convection oven - bake at 325 for 1 hour.

Chicken Noodle Casserole(Low-Fat)

Mix all ingredients except cheese together in a large container.
Place in a large casserole sprayed with Pam, 1/2 of the mixture.
The other 1/2 can be saved for a later date; this freezes well.
Dot top of casserole with cheese.
Bake 20 to 30 minutes at 350\u00b0 (until hot and cheese is melted).
This can also be baked in the microwave on High with a lid on it.

Chicken Casserole

Pour rice in bottom of casserole dish.
Add 1 cup of chicken broth.
Add chicken breasts that have been broken into small pieces.
Add soups that have been mixed with water as can directs. To the stuffing mix, add melted margarine and 1 cup of broth; spread over casserole.
Cover.
Bake at 325\u00b0 for 30 minutes. Remove cover and bake 15 minutes.

Company Beef Casserole

Brown hamburger.
Rinse with hot water and drain.
Combine all ingredients in casserole dish (large).
Bake at 350\u00b0 for 45 minutes.

Low-Fat Turkey Casserole

Spray skillet with nonstick spray.
Cook turkey and onions in skillet.
Peel and slice potatoes; put in pan and parboil.
Drain. Take a casserole dish and put potatoes in bottom.
Then put turkey and onions on top of potatoes.
Mix soups together and pour over top of casserole.
Bake in a 350\u00b0 oven for about 30 to 40 minutes.

Tuna Mandarin Casserole

Add everything together in a bowl except the noodles, this can be done hours in advance. When you're ready to start making dinner follow the directions on the package of noodles. Once they are cooked add them to your bowl of everything else and stir the noodles so that they are well covered. Place into an 8x10 casserole dish. Bake at 350 for 40 minutes.

Best Cherry Cobbler

Preheat oven to 350 degrees.
Melt butter in casserole dish (or the dish you use to bake the cobbler).
In a separate bowl, mix together the milk, flour, and sugar.
Pour the mixture into the dish with the butter, don't stir.
Then add the pie filling again, not stirring, but do take a fork and move the filling around, just to disperse the mixture.
Bake for 1 hour.

Spray a 9 x 11-inch casserole dish with Pam.
Crush Tostitos and spread in bottom of dish.
Add diced chicken.
Blend remaining ingredients except cheese.
Pour over chicken.
Top with cheese. Bake in 350\u00b0 oven until bubbly for about 40 minutes.
Serves 12. There are 3.5 grams of fat per serving, 150 calories per serving.

Healthy Chicken Tetrazzini

Prepare pasta as directed on package, set aside.
Saute onions, red peppers, celery (and optional mushrooms) in a lightly oiled large pan (preferably a deep skillet, 12\" or more).
Dissolve the bullion in the hot water to make broth.
Stir in soups, broth, peas and shredded carrots and cook until all is heated.
Transfer above into large casserole dish(es).
Mix in the chicken and cheddar cheese.
Sprinkle the parmesan cheese over the top(s).
Bake in a 350 degree oven for about 15-20 minutes.

Layered Enchilada Casserole

Brown beef and onion; drain off any fat.
Add seasonings and tomato sauce; simmer.
Using a 9-inch square casserole, add enough of the meat sauce to cover the bottom, then alternate layers, starting with a tortilla, meat sauce and cheese.
Add water around edges.
Cover with foil and bake in 400\u00b0 oven for 40 minutes. Serves 4.
