Jiffy Corn Muffin Mix Copycat

Combine first 5 ingredients in a bowl, mix well.
Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.
If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe.
To make Corn Muffins, preheat oven to 400F, spray muffin pan with non-stick cooking spray.
OPTIONAL: To mix, add any combination of optional ingredients you prefer.
Combine mix with egg and milk, mixing well.
Fill muffin pan 1/2 full, bake for 15-20 minutes.

Muffin Mix Corn

Bring sour cream to room temperature.
Melt margarine and saute onion.
Set aside.
Mix both cans of corn with the eggs. Add muffin mix and sauteed onion.
Stir in sour cream and pour into greased 13 x 9-inch pan.
Sprinkle grated cheese over all. Bake 45 to 50 minutes at 350\u00b0.
Serves 12 to 15.

Corn Muffin Mix Corn Bread

Melt butter in large dish.
Beat eggs and add sour cream, corn and sugar.
Then add muffin mix and stir real good.
Pour over melted butter and bake at 350\u00b0 for 35 to 40 minutes.

Brown hamburger and onion together.
Add Worcestershire sauce, chili powder and tomatoes.
Simmer all together for 15 minutes. Add baked beans.
Mix together and put into baking dish.
Mix corn muffin mix according to directions on box.
Put over top of bean mixture and bake according to muffin mix recipe.
If multiplying this recipe, cut down on chili powder.

Applesauce Brownies

Follow basic brownie mix recipe.
Where it calls for 1 or 2 eggs, just use the egg whites.
Where it calls for oil, substitute equal amount of applesauce.
Brownies are great and cholesterol free!

Cranberry Corn Muffins (Leftover Cranberry Sauce Recipe)

Preheat oven to 400 degrees.
Whisk eggs. Add in milk and cranberry sauce and mix well. Stir in cheese and muffin mix (about 30 strokes, it will be lumpy).
Rest batter for 5 minutes.
Grease a muffin pan.
Fill muffin tins 1/2 to 3/4 full of batter and bake for 15-20 minutes.

Onion Shortcake(A Maxfield Family Recipe)

Peel onion, slice, and saute slowly in butter.
Combine muffin mix, egg, milk, corn and tabasco.
Place in greased 8-inch square pan.
To onions, add sour cream, salt, dill and 1/2 cup cheese. Spread onion mixture over muffin mix.
Sprinkle with remaining cheese.
Bake at 425\u00b0 for 30 minutes.
Let stand for 10 minutes before cutting.

Beef Casserole With Corn Muffin Top

Saute beef and onion in the hot fat in a heavy skillet.
Stir in the consomme, parsley, salt, pepper and A.1. Worcestershire sauce.
Spread the mixture in a casserole of a size that will leave at least an inch of space at the top.
Make your favorite muffin recipe or use a corn muffin mix.
Spoon it carefully on top of the casserole, smoothing with a knife.
Bake 25 minutes at 350\u00b0. Serves 5 to 6. Serve with fluffy mashed potatoes and buttered broccoli.

Easy Sausage Blueberry Muffin Breakfast Cake

Other ingredients will vary according to box directions, such as eggs, oil, etc.
Brown sausage in a frying pan; drain.
Prepare both boxes of blueberry muffin mix, according to directions, in a large bowl.
Add sausage and pour into a 9X13 baking dish.
Cooking times will vary, but mine is usually done in about 30 minutes, or until golden on top.
Use a toothpick to test for doneness if you are unsure.
Cut into squares.

Sift cocoa into Basic Cookie Mix. Beat egg lightly and stir into mixture. Melt butter over low heat and stir into mixture. Add water and vanilla and mix well. Drop by teaspoonfuls onto greased baking sheet.
Bake for 12 to 15 minutes in the preheated oven.

Basic Oatmeal Bars

Preheat oven to 350 degrees F (180 degrees C).
Stir oats into Basic Cookie Mix. Lightly beat egg and add to mixture. Melt butter or margarine over low heat and stir in. Add cold water, vanilla and almond extract. Mix well.
Spoon into a greased 13 x 9 inch pan. Bake for about 30 to 35 minutes until top is golden. Cool and cut into bars.

Basic Coconut Cookies

Preheat oven to 350 degrees F (180 degrees C).
Melt butter over low heat and stir into the Basic Cookie Mix. Beat egg lightly and add to mixture. Stir in vanilla and coconut and mix well.
With lightly floured hands shape into 1 inch balls and arrange about 2 inches apart on a greased cookie sheet.
Bake for 12 to 15 minutes until golden. Cool a couple of minutes before removing from cookie sheet to racks to complete cooling.

Preheat oven to 350 degrees F (180 degrees C).
Lightly beat egg and stir into Basic Cookie Mix. Stir in the butter. Add vanilla and chocolate chips. Mix well. Drop by teaspoonfuls onto greased baking sheet.

Preheat oven to 375 degrees F (190 degrees C). Grease a 9x9 inch pan.

Bake for 25 minutes or until top springs back when touched. Cool and cut into squares.

Wild Blueberry Muffin Peach Cobbler

In a 2-quart baking dish add 1 can of peaches and juice and 1 can without juices.
Next add can of blueberries from muffin mix and juices, DO NOT DRAIN, mix fruits well.
In a large bowl combine muffin mix, water& oil, just until mixed.
Pour over fruit and place in a 425\u00b0F preheated oven.
Bake for about 20 minutes.
