For Apple:
Mix the brown sugar, butter and cinnamon to form a paste. Stuff the paste into the cored apple, then wrap the apple with the pastry. Use remaining pastry to add a decorative touch. Bake for 20 minutes at 375\u00b0F.
For Sauce:
Place the sugar in a pan with 3 to 4 tablespoons of water. Allow this to boil until it turns a rich amber color (232\u00b0F) on a candy thermometer).
Remove from heat and whip in the butter and cream. Season with cinnamon. Stir in the bourbon. Pour over baked apple and serve.

Apple Salsa: In a bowl, combine apples, strawberries and kiwi.
Grate orange peel to measure 1-1/2tsp.
;squeeze juice from orange.
Add peel and juice to fruit mixture.
Stir in brown sugar and jelly.
Chill.
Serve with Cinnamon Chips.
See following Recipe Brush tortillas lightly with water.
Combine cinnamon and sugar; sprinkle over tortillas.
Cut each tortilla into 8 wedges.
Place on a cookie sheet and bake 400 degrees for 6 - 8 minutes or until lightly browned.
Cool and serve with apple salsa.
7 inch cake pan with greased parchment paper.
Cream
Bring juice to a boil.
Add apples and cook 5 minutes.
Mix cornstarch with a little water.
Add to apples; cool.
Put into unbaked pie shell.
Dot with margarine and sprinkle with cinnamon and nutmeg.
Bake at 450\u00b0 for 10 minutes, then reduce heat to 400\u00b0 for 30 minutes.
Cut apples in half and core.
Make pie dough and roll out in portions sized to wrap around each half of an apple.
Place 1/2 apple in center with 1 tablespoon sugar and 1 tablespoon butter and sprinkle with cinnamon to taste.
Wrap dough around each apple half and place in large pan.
Mix 1 cup sugar, 1 tablespoon cinnamon, 2 cups water and 1/2 stick oleo and bring to boil.
Let cool for a few minutes and then pour over apples.
Bake at 350\u00b0 until crust browns.
For the Cinnamon Chips: Brush tortillas lightly with water; sprinkle with sugar and cinnamon.
Cut into wedges.
Place on baking sheet and bake for 5 minutes or until golden and crisp.
(This on it's own is wonderful. Also, I have brushed tortillas with Cajun spice as a snack separate from this entry).
Salsa: In a medium bowl, mash strawberries; add apple, honey and, if using, orange zest.
Serve with Cinnamon Chips.
(I mashed some strawberries, and diced some, just for texture variety).
Wash and dry a large apple - any variety.
Cut in
Combine apples with cinnamon and sugar (5 tablespoons).
Set aside while preparing batter.
In a large bowl combine all other ingredients.
Beat until well blended.
Grease a 10-inch tube pan. Pour in 1/2 of batter.
Place 1/2 of apples, layer over the batter. Add rest of batter, placing remaining apples on top.
Bake at 350\u00b0 for 1 hour and 15 minutes or until done.
Cool 20 minutes and remove from pan.
Peel and core apples.
Place on center of pastry square. Place 1 tablespoon brown sugar and 1 teaspoon oleo in each apple. Sprinkle each apple with cinnamon.
Bring opposite points of pastry up over apple.
Overlap; moisten and seal.
Carefully place a few inches apart in baking dish.
Bake in preheated oven at 350\u00b0 for approximately 1 hour or until well browned.
Serve warm with cream, if desired.
Roll out 1/4 of dough.
Slice into quarters.
Place a peeled and cored apple on each quarter.
Fill the cored center of the apple with cinnamon-sugar.
Top with 1/2 teaspoon butter or margarine.
Enclose the apple with the dough and stretch the dough around it to seal it.
Place in cake pan.
Bake the dumplings at 375\u00b0 for 40 minutes.
Yields 1 dozen.
Preheat oven to temperature 350 degrees.
To prepare apple stuffing, combine first 7 ingredients and salt and pepper to taste in a bowl.
Heat oil in a heavy nonstick skillet over medium heat.
Saute steaks 2-3 minutes per side, or until browned.
Season with salt and pepper and transfer to a shallow baking pan.
Cover each steak with a layer of apple stuffing.
Top each with an apple half, cut side up.
Sprinkle apple with cinnamon and sugar.
Cover pan tightly with foil.
Bake 1 hour.
Preheat oven to 500\u00b0.
Combine cinnamon, apples, vanilla and artificial sweetener.
With rolling pin, roll the bread until flat.
Spoon apple and cinnamon mixture onto center of bread. Roll bread like jelly roll and fasten with a toothpick.
Bake 10 to 15 minutes.
Serve while hot.
Slice the apple into slices; you can either core the apple with a corer first or cut out the core when you get to it; peel if you feel necessary.
Put your bread into the toaster.
Once toasted spread peanut butter on the bread, add the apple to form one layer, and then sprinkle the apple with cinnamon.
Place the other slice on top and enjoy immediately!
Wash large apple and slice across apple to make slices (rings) 1/2\" thick. Use center slices.
Remove center core.
Grease pan with butter.
Place apple slice in pan and sprinkle lightly with cinnamon, then with 1/2 teaspoon sugar.
Dot top with 1/4 teaspoon butter.
Bake about 20 minutes.
Dice the apple and put in the serving bowl then coat apple with lemon juice to stop it from oxidizing.
Chop strawberries into quarters and put into saucepan with sugar and water.
Bring to boil and simmer until it turns into a \"jam\" or \"sauce\".
Pour over the apple.
Prepare pie shells and set aside.
Mix apple juice, cornstarch and cinnamon until smooth and well blended.
Cook over medium heat, stirring until it boils and thickens.
Remove from heat.
Add apples and stir until well blended.
Pour into pie shell.
Bake at 450\u00b0 for 10 minutes.
Lower heat to 350\u00b0 and bake 40 minutes.
Can use 2 crusts or prepare as a Dutch apple with cinnamon, brown sugar and margarine mixed together and sprinkled over top.
Mix first 5 ingredients together.
Mix next 3 ingredients together, then blend in the 2 t. mlk, and add to dry ingredients. Mix only until blended.
Fold in the chopped apples. Spoon batter onto medium hot griddle to cook. Serve.
Top with cinnamon butter and maple syrup.
