Poached Fruit With Cinnamon Puffs - cooking recipe

Ingredients
    3 None apples, peeled, quartered and cored
    8 oz rhubarb, trimmed and cut into 2-inch lengths
    1/2 tsp mixed spice, such as pumpkin pie spice
    1 1/4 tbsp stevia sweetener
    1 cup apple juice
    1/2 tsp ground cinnamon
    1 sheet frozen puff pastry, thawed
    1 None egg white, lightly beaten
    1 cup Greek-style yogurt
Preparation
    Preheat the oven to 400\u00b0F. Line a baking pan with parchment paper.
    For the poached fruit, combine the apple, rhubarb, mixed spice and half the sweetener in a shallow baking dish. Pour the apple juice over the fruit mixture. Cover with parchment paper, then foil. Bake for 30 mins or until the fruit is tender.
    Meanwhile, for the cinnamon puffs, combine the remaining sweetener and cinnamon in a small bowl. Place the pastry sheet on a clean work surface. Brush with egg white, then sprinkle evenly with the cinnamon mixture. Cut the sheet in half to form 2 rectangles. Cut each rectangle crosswise into 12 equal strips. Place the pastry strips on the prepared tray. Bake for 7 mins or until puffed and golden. Cool.
    Spoon the fruit mixture into serving bowls. Top with yogurt. Serve with cinnamon puffs.
