ightly yellow in color. Add zucchini and saute for 4 minutes
Shred the zucchini. It takes about 2 zucchini.
Mix the rest of the ingredients in whatever order you choose.
Fill muffins tins to the top, not 3/4 full like normal.
Bake at 350 for 30 minutes. Check to see if their done with a toothpick.

In a large bowl, combine the first six ingredients. In a small bowl, beat the egg, bananas, oil and extract. Stir into dry ingredient just until moistened. Fold in zucchini and walnuts. Transfer to loaf pan coated with cooking spray. Bake at 325\u00b0 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack
Preheat oven to 350 degrees.

Slice zucchini about a 1/4 inch
Wash, top and tail the zucchini.
Using a potato peeler

Preheat oven to 430 degrees F (220 degrees C). Line a baking sheet with parchment paper.

In a bowl grate zucchini/courgette and carrot. Cut the apple into small chunks.
Preheat the oven to 170\u00b0C/340\u00b0F.
In another bowl cream the egg and molasses with a pinch of salt. Add the grated veggies, oats and grated hazelnuts.
Mix baking powder and flours and add to the egg mixture. Stirr until just combined.
Now fold in the apples and pour batter into prepared muffin pan.
Bake for about 30 minutes.
