Turkey Vegetable Chili(Eat Healthy) - cooking recipe

Ingredients
    1/2 c. green bell peppers, chopped
    1/4 c. onion, chopped
    2 cloves garlic, chopped
    2 Tbsp. olive or vegetable oil
    3 c. cut up cooked turkey or chicken
    1/2 c. water
    1 Tbsp. fresh or 1 tsp. dried oregano leaves
    1 Tbsp. chili powder
    1 tsp. ground cumin
    1/2 tsp. salt
    1 (16 oz.) can whole tomatoes (undrained)
    1 (10 oz.) pkg. frozen mixed vegetables
    2 c. zucchini, cut in 1/2-inch slices
Preparation
    Cook bell peppers, onion and garlic in oil in a 3-quart pan over medium heat, stirring often, until onion is tender.
    Stir in remaining ingredients, except frozen vegetables and zucchini. Break up tomatoes.
    Heat to boiling; reduce heat.
    Cover and simmer for 1 hour, stirring occasionally.
    Stir in vegetables and zucchini.
    Heat to boiling; reduce heat and simmer for 5 minutes, until zucchini is crisp-tender.
    Makes 6 servings.
