Healthy Banana Nut Zucchini Bread - cooking recipe

Ingredients
    3 cups whole wheat flour
    1-3/4 cup stevia in the raw
    1 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    2 eggs plus one egg white
    2 cups mashed ripe bananas
    1-1/4 cup canola oil
    1 teaspoon vanilla extract
    2 cups shredded zucchini
    1 cup chopped walnuts
Preparation
    In a large bowl, combine the first six ingredients. In a small bowl, beat the egg, bananas, oil and extract. Stir into dry ingredient just until moistened. Fold in zucchini and walnuts. Transfer to loaf pan coated with cooking spray. Bake at 325\u00b0 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack
