Stir in baking soda and vanilla.

Turn into large roaster and bake in preheated 250\u00b0 oven for 1 hour, stirring every 15 minutes.
Remove from oven and turn onto some heatproof surface to cool.

Microwave Caramel Corn

Pop the corn; put in a Pam sprayed brown paper bag, then set aside. Combine sugar, syrup and oleo in Pyrex measuring cup. Microwave on High 2 minutes; stir well. Cook 2 minutes on High; stir well. Add baking soda and vanilla; stir well.
Pour 1/3 of syrup over corn in bag. Stir with long handled, Pam-sprayed wooden spoon. Pour in another 1/3 syrup; stir well. Pour in remaining 1/3 syrup. Stir well. Fold down top of bag; place in oven. Microwave on High 1/2 minute; shake well. Repeat 2 times.
