Drain and rinse liver in cold water of all
Cut liver into 3-inch squares.
Season with salt and pepper. Roll in flour and pan-fry in shortening.
Fry until golden brown on both sides.
Turn only 1 time.
Remove liver from skillet and fry onion in drippings, stirring constantly.
Return liver to skillet and add water.
Cover with tight fitting lid and cook for approximately 5 minutes.
Liver will become tough if cooked too long.
Serves 5.
Mince liver and an onion in ther food processor.
In a big bowl combine the rest of the ingridients with the liver-onion paste.

heat the frying pan on medium high heat.
pour one tablespoon of any friyng oil.
using a small ladle pour the paste making half palm size pancakes.
cook each side for 2 minutes or until the juce in not coming out.
serve hot or warm with some garnish or by itself with a little of sour cream.

AKE THE LEBERKASE- Pass the liver, pork, pork belly and anchovy
Preheat the oven to 375\u00b0.
Heat the olive oil in a saucepan. Add the scallions, onions and garlic. Saute, stirring for 5 minutes.
Place the veal and the onion mixture in a bowl.
Chop the liver very finely.
Add it to the mixture along with the bread crumbs, parsley and pepper. Blend well.
*If using beef liver, place liver in a flat dish and cover with milk.
Let sit 3 or more hours.
This softens the flavor of the liver.
Preheat the oven to 375\u00b0.
Heat the olive oil in

Mixture will be thick.
Press flat and even.
Bake at 350 degrees for 20 minutes.
Brownies are done when the pink is gone.
Do not over bake or the brownies will crumble.
Recipe may be doubled.
You can also use fresh garlic instead of the garlic powder, and/or add parsley flakes for color.

Microwave Instructions:
Combine all ingredients except liver in a 1-quart dish.
Cover with waxed paper.
Cook 5 to 6 minutes or until green pepper is soft.
Pour boiling water over liver; let stand 3 minutes.
Drain and dry.
Add liver to other ingredients. Cook for 2 minutes or until liver is done.
Serve hot.
Egyptian Condiment recipe: Put all 6 ingredients in liquidiser then into a 1/2 litre bottle,add cold water till full, shake and keep refrigerated.
