Veal Loaf With Pistachios(Serves 6) - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/4 c. scallions, chopped
    1 1/4 c. onions, chopped
    1/2 tsp. garlic, chopped
    2 lb. veal, ground
    1/3 c. pistachio nuts, chopped
    1/2 lb. calf's liver
    1 c. bread crumbs
    4 Tbsp. parsley leaves, chopped
    freshly ground pepper
Preparation
    Preheat the oven to 375\u00b0.
    Heat the olive oil in
    a saucepan and add the scallions, onions and garlic.
    Saute, stirring, for 5 minutes.
    Place the veal and the onion mixture in a bowl.
    Chop the liver very finely and add it to the mixture along with the bread crumbs, parsley and pepper.
    Blend well.
    Spoon the mixture into a 9 x 5 x 3-inch loaf pan.
    Cover the pan with foil and place it in the oven.
    Bake for 1 hour.
    Remove the foil and bake 15 minutes longer.
