Veal Loaf With Pistachios(Serves 6) - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/4 c. scallions, chopped
    1 1/4 c. onions, chopped
    1/2 tsp. garlic, chopped
    2 lb. veal, ground
    1/3 c. pistachio nuts, chopped
    1/2 lb. calves liver
    1 c. bread crumbs
    4 Tbsp. parsley leaves, chopped
    freshly ground pepper
Preparation
    Preheat the oven to 375\u00b0.
    Heat the olive oil in a saucepan. Add the scallions, onions and garlic. Saute, stirring for 5 minutes.
    Place the veal and the onion mixture in a bowl.
    Chop the liver very finely.
    Add it to the mixture along with the bread crumbs, parsley and pepper. Blend well.
