Meanwhile make tar sauce by adding 1/2 cup
Dill Tarter sauce: Mix together ingredients, cover and chill.
Preheat oven to 400\u00b0.
Mix rub ingredients together, then sprinkle over top of filet. Pat into meat.
Heat oil in skillet over medium-high heat. Cook filets in oil, 2 minutes each side.
Transfer skillet to oven and cook until fish flakes with a fork, about 6 minutes.
Place 1 jar of tarter sauce in a bowl
add 1 tsp of ketchup at a time
taste frequently.
Old Bay, Garlic Powder & Hot Sauce (if using) Mix.

Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.
Add the papaya and mix together. Serve.

Heat broiler.
In a medium bowl, finely crush the potato chips.
Add the crabmeat, tarter sauce, mustard, and pepper and stir to combine.
Form mixture into 6 patties and place on parchment paper or foil lined baking sheet.
Top each with a pat of butter and broil until browned, 1-2 minutes.
