Peel and cut yams. cut to diagonal slices about 1/4 inch slices.
Boil pineapple juice and sugar till syrupy.
Add yams and simmer for 10 minutes.
Remove yams and transfer to 13x9 pan.
Arrange slices to nice galette design, overlapping each pieces.
Meanwhile, add butter to the pineapple syrup, let simmer till fully incorporated.
Pour on the yam slices.
Bake in pre heated 350 oven till tender about 30 minutes.
This will be thickened and gooey.

Scrub and boil whole yams or sweet potatoes for 30 minutes. Drain and cool 30 minutes.
Cut yams in half lengthwise and scoop out meat.
In a large mixing bowl, whip yams with butter or margarine, 1/2 cup brown sugar, and cream or half and half.
Pour into greased casserole dish.
Sprinkle with walnuts and remaining brown sugar.
Bake, uncovered, at 350\u00b0 for 30 minutes or on High in microwave for 20 minutes.
Layer sweet potatoes and apricots in casserole dish.
Sprinkle with pecan halves.
In a saucepan, combine remaining ingredients, including the apricot juice, bring to a boil, and continue to cook for 2 minutes, stirring constantly.
Pour sauce over casserole and bake at 375 degrees F. for 25 minutes.
Melt 1/2 of the margarine in a large pan.
Add the yams, sugar, salt, vanilla and water.
Cover and simmer 20 minutes or until tender.
Stir in the rest of the margarine, nutmeg and lemon juice.
Cook 10 minutes without the lid.

In a shallow baking dish mash one can of yams and leave the other can of yams in pieces (This is more of a personal preferance, you can leave both cans in pieces if you wish).

Top the yams with marshmallows.
Bake 30 minutes or until marshmallows have melted.
Be sure to watch the yams the last 5 minutes because the marshmellows can burn.
